smoked creamy tomato soup, perfect for a cozy night in.

INGREDIENTS

Spero Sunflower Cream Cheese: ½ - ¾ tub, we used The Original :D
SUN-DRIED TOMATOES: ¼ cup, finely chopped
ONION: 1, minced
GARLIC: 3 cloves, minced 
WATER: ½ cup 
OIL: we love avocado or EVOO (optional)
CHERRY TOMATOES: 12 oz 
SPICES: salt & pepp
BASIL: fresh (optional)

TOMATO SOUP

  1. HEAT oil in a medium stock pot, add onion & garlic, & cook for 3-5 min. on low heat until onion is translucent & slightly browned. 
  2. ADD Spero Sunflower  Cream Cheese, crushed tomato, veggie stock, cinnamon, & sea salt & stir well. 
  3. RAISE heat to medium & bring to a simmer. Then turn it down & simmer for 15 min. *add stock as you like to thin soup!
  4. TRANSFER soup to a blender & purée until smooth. 

CREAM CHEESE SWIRL

  1. MIX Spero Sunflower Cream Cheese w/ water & thin to desired consistency. 
  2. DRIZZLE over soup & garnish with parsley & chopped tomato. 
  3. INDULGE in your new fave cozy, creamy, dreamy bowl of tomato soup!
